One of my favorite meals at The Londoner has become the grilled cheese and tomato basil soup. Rather than fork out $10+ every time I want some I set out on a quest to make it at home. Their grilled cheese uses basic cheese and a nice heavy foccaia bread. The tomato basil soup has a rather prominent heat to it and is a little chunky, all of which I like.

Le Madeline's also has a good tomato basil soup, and I knew the recipe (or copycat recipes) are available online, so I decided to start with that, see how it came out and then try to work my way to something more resembling The Londoner's. In my searching I came across the three links listed at the end in sources. The last link is what gave me the idea for the pesto Gouda grilled cheese. I ended up using ciabatta bread because that's what I had on hand.
